I’ve decided to get better at saying no. I hate being driven by guilt and obligation. When those things drive me, I end up irritated and unhappy. I wanna spend my time exactly however I want to spend it, and sometimes that means laying around in pajamas all weekend or eating cold leftovers from my kitchen table while watching episodes of Food TV on my lunch break. 

Today out of guilt I went to lunch at a shitty sandwich shop called “Which Wich” that was all novelty in design but completely rote in taste. They did everything possibly to make ordering a sandwich the biggest, most complicated process a person will endure. 

They had an ok warm oatmeal cookie, but overall I’d have been happier saving my $10 for another time, declining the obligatory luncheon, and having instant oatmeal in my office. 

For dinner I decided to concoct a soup with whatever I had in the fridge, along with some soba noodles I picked up a few days ago. Onions, cabbage, tofu, mushrooms and power greens simmered with soba noodles in a veggie broth I doctored with ginger, sriracha and star anise. Nourishing after a bit of an emotionally taxing day.

Took mom to our fave big Asian grocery store yesterday and couldn’t resist buying a young coconut. Have never attempted to crack into one but lately I’m hooked on coconut water and this reminded me of a local Thai restaurant where, for $5, they’ll crack open a coconut for you, let you sip the water through a straw like you’re at some beachy resort, then crack it again to expose all the fleshy goodness. 

I used a big chef’s knife to score then whack all around the apex of the coconut. It was a matter of whacking swiftly and as hard as I could manage with accuracy. I feared losing a finger during this process, but once I pried open the cap and found soft coconut flesh protecting that delish nectar, I knew ruining that knife was worth the effort (I slightly bent the blade oops!).

I then cut out that round fleshy mound, slurped that whole vessel of electrolyte-rich water, then whacked the nut some
more so I could pry its halves apart and spoon out some flesh to complete this yummy snack. The flesh of this thing was more coconutty than I’ve had in the past!

This $1.50 coconut can’t be an everyday delight for a number of reasons (hard to find, high fat, I’m kinda lazy in the kitchen lately), but I can say that now I have a dedicated coconut knife should the occasion ever present itself again.  And I’m sure it will..just not soon.

Bfast:  two soft boiled eggs, grapefruit

Lunch:  Mediterranean salad and tomato soup from Noodles & Co.  Didn’t eat all the pasta noodles or soup. 

Dinner (forgot to snap pic): 1/2 Schlotzkys original sandwich..some chips. 

Drank about 90 oz water. 

Took a solo meditative walk after a chat w/ bestie. It was good to be alone to clear my head..I’ve felt very foggy lately.

Lunch:  oatmeal made in my office, jug of water

Snack:  protein shake, granola bar, caffeine free orange tea

Post-work snack:  5 slices deli meat rolled with 1 slice Swiss cheese, jug of water. 

Dinner: I’m waiting for brown rice to cook. Takes about 1.5 hours in the rice cooker. Meant to come home over lunch and start the rice and eat something more substantial. Will prob have brown rice with 2 eggs..poor fried rice.

Got my new kicks on super clearance at Ross about 3 weeks ago. Neon and gray Pumas for $14 so, natch, I got the matching bag as well. They’re way comfy and stable and wide enough for my size 6.5 Flintstone feet.  And I always thought the little silouhetted logo on the toe was a cute Puma touch. 

Now the big question: will I put them to their intended use and hit the pavement, or will I just wear them to casually window shop per usual?
